Home-Made Pickles as a Gift : Working Class Foodies
As the late summer produce fades from the market, Max & Rebecca pick up some pickling tips from the local pros, including Nick Horman of Horman’s Best Pickles, on how to preserve vegetables for the winter and make their own pantry items. A brine is a solution of water combined with salt, vinegar, and/or sugar to raise the acidity of the liquid high enough to preserve whatever food is put in that brine – while killing off any bad bacteria that could thrive on the food.
The most basic brine is a salt brine, which is about 1.73 oz of pickling salt to 1 gallon of water (check on that – I’m doing this off the top of my head!).

Yeah…Humphrey wasn’t a fan of pickle-making, unfortunately. Not enough meat involved

Great idea, we love Indian food! We’ll have to get working on that.

Great advice! We’ve done this before but love the idea of doing it with beets – delicious. Thanks!

When you finish a jar of pickles (homemade or storebought) don’t throw out the brine, slice some more veggies up and put them in. Store in fridge and eat after a week or so. Try sliced raw beets – yum. Also hot peppers sliced in rounds, remove seeds 1st. Yum yum.
